We've all had a Chicken Florentine Ring at a Pampered Chef Party, but I'd never had it organic....
Until now....
I get so excited when I am able to adapt something I love using organic ingredients and this is a perfect example. I remember having this for the first time at my cousins wedding shower in 2004, and I have had it several times since, usually at parties. Its so festive with the red and green, its great around the holidays and its a crowd pleaser, so its easy to see why this would make a great appetizer, but I have yet to see anyone make it organic so I HAD to try it and see if it tastes the same.

Ingredients:
1 10 oz bag of frozen organic spinach
2 Tubes of Annie's Organic Crescent Rolls
8-10 oz of Organic Shredded Cheddar Cheese
1 Organic Red Bell Pepper (diced)
10 oz of Organic Shredded Chicken ( I used a Rotisserie chicken)
1/3 Cup of Organic Mayonnaise
1/2 TSP Salt
1/8 TSP Organic Nutmeg
Preheat your oven to 375
Grab your baking stone and lay out 1 1/2 tubes of Annie's Organic Crescent rolls into a circle with the large side overlapping and the points out like a sun.
In a bowl mix together your 10 oz bag of frozen spinach, your 10 oz of shredded chicken (I use rotisserie chickens that I get at EarthFare for $5.) 8-10 oz of shredded cheddar cheese, 1/3 cup of organic mayonnaise, 1/2 TSP of salt, and 1/8 TSP of nutmeg and then fold in your diced organic red pepper.
Begin portioning out your mixture onto the large part of the dough as it fills the center of the overlapped crescent dough pieces.
Then begin to lift the points up and over the mixture and secure down at an angle to the middle of the dough until it forms a ring.
Bake at 375 for 20-25 minutes and until golden brown, serve on the ring, and enjoy!
