Organic Toffee Dessert (AKA Crack, because it's so addictive)

I came across this dessert while watching Trisha Yearwood's Food Network cooking show. At first, i wrinkled up my nose because she was using saltine crackers???


I will never forget watching that episode and saying to myself, "there is no way that tastes as good as she says it does?!" And then I made it...... OMG.


Fast forward 5 years to my new organic conversion, and I was mourning desserts I used to make before I switched to an organic and non-gmo lifestyle, and all of a sudden I thought, "why can't I make that organic?! Wait, I CAN make this organic" ~ squeal!!!!!!



I give you Organic Toffee AKA "Crack"








I limit how much I make this because of the restraint I have to use not to eat it ALL! By myself...

Ingredients:

I box of Organic Saltine Crackers

2 Sticks of Organic Butter

1 Cup of Organic Brown Sugar packed

1 Package of Organic Semi Sweet Chocolate Chips


You will start by pre-heating your oven to 400,

Line a baking sheet with aluminum foil (make sure the pan you use has a lip) and spray with organic non-stick cooking spray. I picked up a good one at Whole Foods, 365 brand.

Lay out organic saltine crackers, Back to Nature makes a great one, till they fill the pan (about 35 depending on the size of your pan).


In a saucepan, melt 2 sticks of organic butter, I got mine from Costco Kirkland brand, and 1 cup of packed brown sugar ( Kroger Simply Truth Organic). Bring this mixture to a boil for 5 minutes, stirring consistently, and them remove from the heat and pour over the saltines.






Place in a 400 degree oven for 5 minutes. Once you pull it out of the oven, it will be VERY bubbly and the saltines will move around, so be careful not to jostle it as you remove and place on the counter.


Grab your organic semi-sweet chocolate chips, I got mine from Kroger Simply Truth Organic, and begin sprinkling them directly onto the toffee as the bubbling subsides. I pop my tray back into the oven for 1 minute to get the chips to begin to melt. (They will on their own it just takes longer). Once the chips are melted, take it out of the oven and using a spatula begin to spread the chocolate until it is a smooth layer atop the toffee mixture.



Place in the freezer for at least 20 minutes but until hardened. I remove the foil from the pan, you don't have to put the pan in the freezer unless you need it for support under the aluminum foil.



Once completely hardened, remove from the freezer, "crack" into uneven pieces, and serve. Place any leftovers, (ha!) into an air tight container and enjoy.
