Happy St Patrick's Day

In honor of my Irish roots, I made Organic Corned Beef and Cabbage for St Patrick's Day!



Ingredients:

1-2 lbs of Corned Beef from Whole Foods ( Minimally processed, uncured, no preservatives, no nitrites, no hormones, no antibiotics, gluten-free)

1 Head Organic Cabbage

1 Bag of Organic Russet Potatoes

1 Organic Medium Yellow Onion


Total cook time about 5-6 hours


Start by putting your meat into your crock pot or stock pot and covering with 2 inches of water. (You could also use Beef Broth of you wanted to here- totally optional.)


Make sure to open and include the packet of seasonings in, if it has not already been marinating in the packaging. ( There are two different kinds at Whole Foods. One vacuum sealed the seasonings directly on the meat. The other includes a little plastic packet that needs to be opened and sprinkle the herb/seasoning mix directly onto the meat.)


Bring to a boil and then lower temperature to a simmer for 2-3 hours depending on the size of brisket.



























Once it has cooked for 2-3 hours on simmer, add in your cut onion, along with your peeled and cut #organic potatoes. (Use enough for each person to have at least one potato and a few extra for leftovers). Keep the potatoes in large chunks, as you don't want them to fall apart once they are cooked. It will take about an hour for the potatoes to cook in the broth, especially in larger pieces.





30 minutes to an hour before you are ready to serve, add in your washed and cut cabbage. You can rough chop the cabbage. It doesn't have to be as shredded as slaw, I would cut into pieces about with size of a fig newton (strange, I know, but you're imagining a fig newton now, aren't you?) This will keep it from getting cooked too quickly and becoming mushy.



Serve alongside an Irish Soda Bread or a nice Sourdough and your family will feel like they just found a pot o'gold!
