Organic, Homemade, Creamed Corn

Make your own organic, homemade from scratch, creamed corn, yes please!! And it's easier than you would think!


Organic creamed corn is one of those items that I have NEVER been able to find in the store no matter how hard I look, and being from the south, that's just not acceptable. So I asked myself, why not make it from scratch?! I mean, what did they do before grocery stores anyway, right?


And so I made it from scratch and it turned out perfect and was delicious!!



Ingredients:

1-2 cans organic corn drained

1 TSP Salt

1/4 TSP Pepper

2 TBSP organic butter

2 TBSP organic cane sugar

1 cup organic heavy whipping cream

1 cup organic milk

2 TBSP organic flour



Place your drained corn, salt, pepper, butter, sugar, and milk in a pot on the stove on medium heat and start to heat, It will be very soupy.


In a separate bowl or cup, pour 1 cup of milk, and then begin to whisk in 1 TBSP of flour at a time to prevent lumps, then whisk in 2nd TBSP of flour. Once you have mixed flour and milk and there are no lumps, pour into your corn mixture and bring to a low bubble, stirring often to prevent sticking on the bottom of your pot.


Once mixture thickens up, take a potato masher and begin smashing kernels of corn so that it mixes into the cream, achieving "creamed corn". You can also use the flat bottom of a glass if you do not have a potato masher. Anything you have to smash the corn, just be gentle and do not burn yourself.



You can serve as a side dish for a holiday, use in a Corn Casserole, but this organic, homemade from scratch creamed corn is sure to have your family saying OMG!
