Vegan, Organic, Corn Chowder

My sister made this over Christmas, and I had no idea that it was vegan, but it was DELICIOUS! I said "Ali, I NEED this recipe and I am TOTALLY making this organic and putting it on my blog!" And then she joined me and we did a little collaboration ;-)


It's easy to make, and we used a pressure cooker, but you could absolutely make this using a pot on the stove.

INGREDIENTS:

1 TBSP organic Coconut Oil or Oil of choice

1 -1 1/2 cups organic diced Yellow Onion

1 -1 1/2 cups organic diced Celery

1 -1 1/2 cups organic diced Carrots

1 -1 1/2 cups organic diced Red Pepper

1 TBSP organic minced Garlic

1 TBSP fresh or TSP dried organic Parsley

1 TSP dried Thyme

Salt & Pepper to taste

1-1 1/2 TBSP organic Corn starch or Flour/Flour alternative

1 32oz container organic Vegetable Broth

2 cups (roughly 2 large) organic diced Potatoes

2 10oz bags organic frozen corn or 2 15oz cans (DRAINED) organic canned corn

1 can organic Coconut milk (Full fat) or 2 cups unsweetened Coconut milk or dairy alternative


Start by melting your organic, coconut oil on medium heat, or Saute mode in your pressure cooker and add in your onion, celery, carrots, and red peppers. Cook it down and then add garlic, and your seasonings (Parsley, Thyme, Salt and Pepper).


Add in 1 and 1/2 TBSP of organic corn starch or flour of choice and mix until vegetables are covered and then immediately begin to pour in broth a little at a time. Let it thicken, then add a little more broth, and repeat.



Add in your potatoes and your corn and continue to cook for 30 minutes, on the stove, or switch your pressure cooker to soup mode and follow your pressure cooker guidelines. Once soup is done and all pressure is released, you will add in a can of FULL FAT organic coconut milk and place on slow cook mode until you are ready to serve.



Serve alongside Organic, Gluten-Free, Corn Bread and get ready to say "OMG"
